Hot and Sour Soup

Group A:
 4 cups Water
 6 tbsp Essential Cooking Sauce
 4 tbsp White Vinegar
 1 tbsp Sugar
 2 tsp Chili Garlic
 1 pinch White pepper
 1 block of Tofu - cut into small cubes - horizontal ½ - then 6s across square
 1 small Carrot - shredded
  cup Bamboo shoots
  cup Soaked black mushroom strips OR small cubes of fresh mushroom
Group B:
 1 oz Tapioca flour mixed with 4 oz of water - make Tapioca Slushies 🙂
 1 Whisked or use 1 C of the whisked egg at the Wok station
 1 tbsp Sesame oil
Cooking instructions:

Put GROUP A’s ingredients into a big wok at HIGH heat.

Once the soup boils for 2 minutes, add the Tapioca Slushies in. Let it boil for 1 minute.

Turn heat to Medium heat so it is simmering.

Stir the soup in clockwise direction and slowly (with the other hand), pour in the whisked egg and slowly stir the soup in clockwise direction. Once all eggs are in, let it simmer for one minute. Add in Sesame oil.

Turn off heat and pour the soup in the DAILY SOUP warmer.

To serve:

Use the dinner curry bowl. Scoop 12 oz into it.

Top with chopped scallions.
