Cabbage Salad with Coconut Peanut Sauce

If you are in a hurry but you want to still serve something special, try this!

 4 cups shredded cabbage
 ½ small carrot - shredded or spiraled
 ¼ yellow onion - thinly sliced
 8 tbsp Coconut Peanut sauce
 1 tbsp Essential sauce
 1 lemon
 10 mint or basil - chopped
 1 tbsp toasted ground peanuts
 Some chili pepper - chopped (optional)

Put all the vegetables in a bowl.

Add all other ingredients - except the peanuts.

Mix - by hands with gloves - until everything is incorporated into the vegetables.

To serve: top off with peanuts.

(People can pan-fry the tofu or bake the tofu until the sides are crispy and cut them into small cubes and toss them with the cabbage at the last step so the tofu wouldnot be crushed or smashed)
