Cashew Orange Chicken

Ingredients:
 1 tbsp cooking oil
 ½ lb chicken breast-thin bite-size pieces
 1 clove of garlic-minced
 ¼ cup Essential Sauce Gluten-Free*
 ½ cup water or chicken stock
 ½ medium bell pepper, cored and thinly sliced
 ¼ medium yellow onion, thinly sliced
 ¼ cup unsalted cashew nuts
 ½ cup canned mandarin orange slices
 A pinch of ground black pepper or ground white peppercorn
Procedure:

Heat oil in wok or stir-fry pan on med-high.

Add chicken and cook until 1/2 done (1 minute).

Add in garlic.

Add Essential Sauce Gluten-Free and water or chicken stock.

Add bell pepper, yellow onion and cashew nuts.

Cook until chicken is done.

Toss in mandarin orange pieces, white peppers ginger and stir about 30 seconds.

Take out and serve with rice.
